The cocoa nibs alkalization machine( (or dutching reactor)) is specially designed for the alkalization treatment of cocoa nibs during cocoa processing. By accurately controlling the temperature, pressure, moisture, and alkalizing solution dosage, the machine improves the color, flavor, aroma, dispersibility, and processing performance of cocoa products, providing an ideal foundation for producing high-quality cocoa liquor, cocoa powder, and chocolate products.
The equipment adopts an advanced heating and mixing system to ensure uniform contact between cocoa nibs and the alkalizing agent, resulting in consistent alkalization effects and stable product quality. It can be used independently or integrated into a complete cocoa processing line.
Working PrincipleAfter roasting and winnowing, cocoa nibs are fed into the alkalization vessel. The alkalizing solution is evenly sprayed onto the nibs while the mixing system continuously agitates the material. Under controlled temperature and pressure conditions, the alkalization reaction proceeds uniformly. After the treatment is completed, the cocoa nibs are discharged for subsequent grinding and cocoa liquor production.
