Cocoa nibs are treated with alkali (potassium carbonate or sodium carbonate) by dutch cocoa powder machine to improve the color,flavor and solubility of cocoa powder to meet the needs of food and beverages. During the alkalization process, the alkalineutralizes acetic acid, adjusts the pH value, and darkens the product to red, brown or black; catalyzes the decomposition of aromatic substances and releases flavor; it also has a bactericidal effect and reduces the number of microorganisms.
